Vegetable Pasta

Ingredients
6 oz (dried) Pasta - Barilla Whole Grain Rotini 3 tbsp Extra Virgin Olive Oil 1 serving 1 med yellow onion, diced3 clove Garlic, minced2 medium Heirloom Tomatos, large diced4 Mushroom, White Large, sliced 1 medium Zucchini, sliced3 oz Baby Spinach (raw) 2 tsp Dried Oregano2 tsp Dried Thyme 6 leaves Basil 4 tbsp Parmesan Cheese, grated
Directions
1. Cook pasta to al dente and set aside
2. Heat large saute pan
3. Add oil, garlic, and onion
4. Add remaining vegetables, stir
5. Add basil leaves to pan, lay atop
6. Cover and cook until vegetables are soft, remove basil
7. Add cooked pasta and parmesan, stir
8. Enjoy!
