Meatless burritos

Ingredients
15.5 oz can of northern beans, drained and rinsed 1/2 c natural, low-sodium salsa (I use Frog Ranch)1/2 c frozen corn1 teaspoon chili powder 8 tortillas 1/3 cup 2% shredded Mexican cheese 16 Tbsp fat-free sour cream
Directions
1. Warm tortillas in an oven heated to 170 degrees. Do not overcook! They'll crisp up and won't roll well.

2. In a medium sized saucepan, mash beans with a fork, leaving some of the beans whole.

3. Add corn, salsa and chili powder. Mix well. Heat over medium until beans are warmed through.

4. Spoon 2-4T of bean mixture onto each tortilla. Top with 2 Tbsp fat-free sour cream. Sprinkle with cheese then roll tortilla, burrito-style.
