0.25 cup, shredded Mozzarella Cheese, whole milk0.5 tsp Pepper, black1.0 tsp Salt1.0 tsp Garlic, minced0.5 cup Sharp Cheddar Cheese1.0 tbsp Dairy, Milk - Whole2.0 cup Baby Spinach (raw)6.0 Extra Large eggs
1. Preheat broiler to 500 F. Crack six eggs into a bowl and add in 1 tbsp of milk, 1/4 tsp of salt and a dash of black pepper. Whisk in bowl until combined.
2. In a 12 inch, oven-safe skillet heat EVOO over medium heat. When oil shimmers add minced garlic and cook for 1 minute.
3. Add spinach to pan, sprinkle 1/4 tsp of salt and dash of pepper on top, and toss with tongs to coat with oil and garlic. Cook spinach until it reduces down, about 3-5 minutes. Spread spinach evenly around skillet.
4. Pour egg mixture into the middle of the skillet, allowing it to spread over the spinach. Sprinkle mozzarella and cheddar cheeses on top. Cook eggs for about 3-5 minutes until bottom sets.
6. Move skillet to broiler, keeping it at least 6 inches from the heat source. Let it cook until it puffs up and begins to brown slightly, about 5 minutes. Remove from broiler, move fritatta to a serving dish, and let rest for a few minutes before slicing.
7. Serve with your favorite breakfast foods and enjoy!
