Ingredients
3/4 cup chopped yellow onion1/4 cup julienned shallot10 cloves Garlic, pressed5 cloves garlic, julienned1 tbsp minced serrano pepper (remove seeds for less heat) 3/4 cup red wine3 tbsp brown sugar3 tbsp fresh basil, finely chopped1 tbsp fresh oregano, minced1.5 tsp crushed red pepper (or to taste)6oz can tomato paste1/4-1/2 tsp frsh ground black pepper4 Roma tomatoes, chopped (approx 100g)1000g chopped heirloom tomatoes (any tomato will work)
Directions
Heat oil in pan. Add onion, shallot, garlic, and serrano, then sautee until beginning to brown (about 5 mins). A wine, sugar, basil, oregano, crushed red pepper, tomato paste, and black pepper one at a time, stirring well between each ingredient. Add tomatoes and stir in well. Bring to a boil, stirring regularly. Reduce heat to low and simmer for 20-30 mins, stirring occsionally, making sure the tomatoes reduce. Taste. You can now add additional basil, oregano, sugar, salt, or crushed red pepper as needed.
