1 2-pound container grape tomatoes (Ciliegine is best)2.5 tablespoons thinly sliced fresh basil1.5 teaspoons fresh thyme1.5 teaspoons salt (or to taste)1 teaspoon ground white pepper3 tablespoons olive oil1.5 tablespoons balsamic vinegar10 ounces mozzarella cheese slices
1. Cut one-third of the tomatoes in half lengthwise. Leave the remainder whole.
2. Add all of the ingredients in the order listed. Slice the mozzarella proportionately to the tomatoes.
3. Chill in the fridge for about an hour, or for as long as you can stand it.
