Couscous Salad Greek Style

Ingredients
1 cup whole wheat couscous3/4 cup low fat chicken broth3/4 cup fresh orange juice2 Tbsp. Olive Oil1 Tbsp. Lime Juice1/2 cup cherry tomatoes, sliced1 cup cucumber, chopped1/4 cup green onions, chopped1/4 cup fresh oregano or 1 Tbsp. dry1/2 cup goat cheese or feta (or to taste)Salt & Pepper to taste
Directions
Boil OJ and broth. Turn off heat and add couscous and put the lid on.
Whisk oil and lime juice together and prep veggies. Fluff couscous and add veggies, i dressing. Top with cheese of choice, oregano and S&P!
