Loaded Baked Potato Salad

Ingredients
2 lbs of red potatos, diced6 slices of turkey bacon, cooked crisp and crumbled3 shallots, chopped1 cup fat free sour cream1 cup light mayonnaise1 cup shredded cheddar cheese1 tbsp of Old Bay seasoning
Directions
1. In a large pot, bring water to boil. Add diced potatoes and cook for about 20 minutes, until tender.
2. Meanwhile, in a large bowl, combine mayonnaise, sour cream, bacon, shallots, cheese, and seasoning. Stir to combine.
3. Drain potatoes and rinse with cold water. Allow to cool for about 5 minutes. Stir potatoes into mayonnaise mixture. Cover tightly and refrigerate.
