Pasta Dough

Ingredients

1 large egg for each two people Pinch of Salt (if you want) 1 cup of flour per egg (if eggs are large)
****You can use Whole wheat flour or a mixture of other types of flour in place of white unbleached flour, but you might have to add a teaspoon or so of water or less flour.
Measure 3/4 of the flour in large bowl
Make a well (hole) in the flour
Break eggs into the well.
Stir eggs with a fork to scramble As you mix knock flour from the sides of the well into to the mixture a little at a time.
When the mixture is solid (no liquid) turn it out onto a floured surface.
Knead dough a few minutes adding flour to produce a soft, smooth, elastic, non-sticky dough.
Let rest covered for about 10 minutes.
* if you have a pasta machine (non-electric)Shape into a 1-2" in diameter roll, cut into 1" pieces and run through Pasta machine starting with widest setting, moving it a notch for each pass until the thinness you like.
(if still sticky just flour well each pass in the Pasta machine.)
You can make Lasagne from here or use your attachment to cut the type of noodles you want.
** If you do not have a Pasta machine, roll out like pastry dough for pies thine as you like and cut into thin (1/8 to 1/4) strips or wide strips for Lasagne
Bring one quart of water for each egg to a boil. You can add a few drops of olive oil to the water to prevent noodles from sticking together If you like. Drop the noodles in a few at a time until they are all in the pan. These noodles will cook QUICKY and will float to the top of the water. Check for how much you like them done. Drain and use in place of any box noolde.
** you can make wide long retangular strips and add filling and fold over and press edges with a fork.
