Sweet Side Carrots

Ingredients
1 cup of sliced round carrots3 TBSP of Splenda or your favorite sugar substitute.½ tsp Ground, Fresh, or Powdered Ginger root1 tsp of Cinnamon2 TBSP Extra Light Olive Oil
Directions
Makes One Serving

Take your fresh, organic, or regular long carrots
chop them medium round slices until it make one cup
(or)
you can also use frozen sliced carrots, but fresh comes out so much better.

Fill your saute pan with 2 Table Spoons with the Extra Light Olive Oil - the reason I use extra light is, it is healthier and doesn't take away from the wonderful aroma of the carrots and seasonings

Heat saute pan on medium high

Add carrots, and stir them every minute or so for 5 minutes

Now, add the Splenda or sugar substitude and stir once more.

After about a minute add your ginger and cinnamon, stir again once each minute for 5 more minutes.

Carrots should be slightly tender, but not mushy.

Turn heat off, drain carrots

Place carrots on plate, garnish with a slice of cilantro. and Voila ! Your master piece side dish is done.
