Sour Cream Apple Cake

Ingredients
1 2/3 cups all-purpose flour 3/4 tsp. baking powder 1/4 tsp. baking soda 1/2 tsp. ground cinnamon 1/4 tsp. salt 1/2 cup granulated sugar 1/4 cup canola oil 2 egg whites 1/3 cup applesauce 2/3 cup reduced-fat sour cream 1 Granny Smith apple, peeled, cut into 1/4" pieces equal 1 cup 1/2 cup confectioners sugar (optional)
Directions
Prehaet oven to 350. Coat 8 1/2"x 3/4" loaf pan with cooking spray. Combine first 5 ingredients; reserve.

At medium speed, beat granulated sugar and oil until combined. Beat egg whites until combined. Beat in applesauce and flour mixture until combined. Beat in sour cream and apples until combined. Spread evenly in pan.

Bake 50-55 minutes or until toothpick insered into center comes out clean. Cool on rack 20 mintues. Remove from pan; cool.

Optional topping: 6 Tbs. Water into confectioners' sugar; drizzle over cake.
