Kiley's Enchiladas

Ingredients
2 boneless skinless chicken breast6 mission flour tortillas1 can healthy request cream of chicken1 cup reduced fat sour cream1 can diced green chillis1 small onion1 cup low fat cheese shredded1 tsp garlic powder1 tsp red pepper1 tsp black pepper La Victora enchilada sauce
Directions
Pre-heat oven to 350. Boil chicken in pot until the chicken floats, meanwhile in a large mixing bowl add cream of chicken, sour cream, garlic powder, red pepper, black pepper, diced green chillis 1/2 cup cheese, mix together. When chicken is done boiling I put it in a food processor with onion until it is shredded, add to the mixing bowl with other ingredients and mix well. Spoon mixture into tortillas, roll tortillas and place a toothpick in the center of each enchilada to secure. Pour enchilada sauce over the enchiladas evenly and top with remaining cheese, cover with foil and place in the oven for approx 30 minutes. Make 6 servings

    Great spicy dish - I made with corn tortillas instead of flour. I noticed on the nutrition calculator you only have .5 chicken breast instead of 2 per the recipe. May want to update. - 12/31/08
