Chicken & Wild Rice Soup

Ingredients
16 ounces Chicken Breast (cooked), no skin, roasted 1 small Onion, chopped 1 cup frozen Peas and carrots 1/4 tsp Pepper, black 1/4 tsp Thyme, ground 8 oz canned mushrooms, drained1 6 oz Box Uncle Ben’s Long Grain & Wild Rice includes packet 5 (14.5 oz) cans Swanson Fat Free low sodium chicken broth 2 more cans for reheating.
Directions
Place chicken, onion, pepper, thyme, rice and packet, and chicken broth in large pot. Bring to boil, reduce heat to simmer, cover and cook about 20 minutes. Add frozen peas and carrots and mushrooms and cook about 7 minutes more or until rice is cooked. Cool and refrigerate.
