Ingredients
1.0 cup, chopped Onions, raw1.0 pepper Jalapeno Peppers1.0 tbsp Extra Virgin Olive Oil10.0 serving Cherry Tomatoes, Fresh, 1 Tomato1.0 cup red lentils
Directions
Cook vegetables in olive oil around 5 minutes. Add spices, lentils, & water. Bring to a boil, lower temp, cover & simmer around 30 minutes--until all ingreds are tender. Add 1T lemon juice. Garnish with plain yogurt & parsley. Serving Size: 4 servings
