Raspberry Oat Bran Muffins

Ingredients
* Oat Bran, 1.5 cup * Flour, white, 1.5 cup * Brown Sugar, .5 cup, packed * Baking Powder, 2 tsp * Baking Soda, 2 tsp * Cinnamon, ground, 1 tsp * Applesauce, unsweetened, 1.5 cup * Egg, fresh, 2 large * Vanilla Extract, 1 tsp * Raspberries, 2 cup Pecans or walnuts are optional and not calculated into the nutritional information
Directions
Mix dry ingredients in a medium bowl. In a separate bowl combine applesauce, eggs, and vanilla. Put the applesauce mixture in the flour mixture. Fold in berries and optional nuts. Bake at 400 degrees for 15-18 minutes. You can substitute blueberries for the raspberries.

You can also use egg substitute instead of the eggs.

    I made a few changes. Used 1/2 white, 1/2 wheat flour, used 1/2 cup egg substitute and added 1/2 cup Splenda brown instead of the brown sugar (this should make it sweeter). Also used frozen raspberries. Anyone know why muffins have black spots which have bitter aftertaste? - 2/17/09
