Cilantro Lime Shrimp with Roasted Tomatillo Sauce

Ingredients
2 tbsp Extra Virgin Olive Oil .5 serving Pepper, Poblano 1 Pepper (by AGGIEKBEAR03) 5 medium Tomatillos 0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 1 clove Garlic 2 tbsp Lime Juice, juice of 1 lime 35 medium Shrimp, raw 16 tbsp Cilantro, raw 2 tbsp Pompeian Gourmet Red Wine Vinegar 1tbsp 2 tbsp Lime Juice, juice of 1 lime 2 clove Garlic .25 tsp Pepper, red or cayenne .5 tsp Paprika 1 dash Salt 1 dash Pepper, black
Directions
1.Preheat oven to 400.
2.Place red onion, tomatillos, and poblano on baking sheet. Season 2 tablespoons of olive oil, salt, and pepper.
3.Bake for 20 minutes.
4. Remove from oven and place in blender with cilantro, lime juice, garlic clove, salt, & pepper to taste.
5.Blend until smooth. Set aside.
6.In a small bowl mix, ¾ cup of fresh cilantro, red wine vinegar, olive oil, lime juice, 2 minced garlic cloves, red pepper flakes, smoked paprika, lime zest, salt, and pepper. Whisk until combined.
Pour cilantro lime sauce over shrimp that has been patted dry, toss to coat everything.
Spread seasoned shrimp out on a baking sheet, making sure they are in a single layer.
Bake for 8-10 minutes, until pink.
Garnish with fresh cilantro and serve with tomatillo sauce.
