2.0 cup Flour, white1.0 tsp Baking Soda2.0 tsp Cinnamon, ground2.0 tsp Baking Powder0.5 tsp Nutmeg, ground0.5 tsp Salt0.25 cup Butter, salted0.5 cup Baby Spinach (raw)0.5 cup Milk, 1%0.5 cup Honey0.5 cup, sliced Banana, fresh2.0 tsp Vanilla Extract1.5 cup Blueberries, fresh
1. Preheat oven to 325.
2. Melt butter and set aside
3. Mix together dry ingredients in a bowl
4. In a blender combine butter, spinach, milk, honey, banana and vanilla.
5. Make a well in dry ingredients and add blended mixture. Mix until just combined with some lumps. Gently fold in blueberries.
6. Scoop batter into muffin tin 3/4 full. Bake 25 - 30 minutes or until an inserted toothpick comes out clean.
