Roasted Cauliflower Chickpea salad

Ingredients
4 cup (1" pieces) Cauliflower, cooked 2 cup Chickpeas (garbanzo beans) 3 tbsp Extra Virgin Olive Oil 2 serving Dijon Mustard, Trader Joe's Whole grain 1 Tbs=1 serving (by TREES1960) 2 tbsp Cider Vinegar
Directions
Heat oven to 400 degrees. Toss cauliflower and chickpeas with 1 T olive oil. Roast until crispy, approx 45 minutes. While that is cooking, whisk together mustard, 2 T olive oil, and vinegar (cider or red wine). When vegetables are cooked, toss with vinegarette. Serve warm.
