Celery Root Mash (1 cup serving)

6 cup Celery root (Celeriac), peeled and cubed2 tbsp Butter, unsalted 1/4 cup Half and Half Cream 1/4 cup Sour Cream 1/2 teaspoon saltpinch of white pepper1 tbsp minced fresh Rosemary (or more)
Boil the peeled and cubed celery root in water until soft. Drain. Mash the celery root with a potato masher and/or an electric mixer. (6 cups of cooked cubed celery root mashes down to about 4 cups.) Add the butter, half and half, and sour cream, salt, and white pepper. Mix well. Stir in the minced fresh Rosemary, and serve.
Serving Size: When all mashed & mixed, makes about 4 cups. Serving size is 1 cup.
