Gigi's Chicken Salad

Ingredients
1/2 cup Celery3 medium (4-1/8" long) Scallions, raw 1/4 cup dried Cranberries, diced8 tbsp Cilantro, raw 1/2 cup Granny smith apple, chopped2 1/2 cups Rotisserie Chicken 6 - 8 Dried Apricots, diced 8 oz Fat Free Plain Greek Yogurt 1/2 cup slivered almonds
Directions
Debone chicken. Place chicken pieces in food processor and pulse 10-12 times. Chicken will be finely minced. In a large bowl, combine chicken, cranberries, apricots, celery, apple (if desired), almonds, cilantro, yogurt, salt and pepper. Stir to combine. Taste for seasoning. If mixture needs more moisture, add more yogurt. (Mixture is better the day after it is prepared. It gives the ingredients a chance to meld.)
