Cold green bean casserole/salad

2 lbs. Bag of frozen green beans 6 slices Bacon2 tbsp Bacon Grease Dripping 1 cup, sliced Onions, raw 2 tbsp Cider Vinegar 2 tbsp.Dijon Mustard 2 tbsp Extra Virgin Olive Oil
Cook beans according to package directions. Drain and set aside to cool.
Cook bacon and let cool. Separate some of the drippings for later use. Break the bacon into pieces. Set it aside.
Use a sauté pan or wherever you cooked the bacon on medium heat and add the drippings and the onions until almost tender. Remove the onions and set aside. Add to the pan the mustard, vinegar and olive oil and whisk it altogether. This forms a vinaigrette.
Now mix together the green beans, the onions, the bacon and the vinaigrette. Season with salt and pepper to taste. Refrigerate to chill.
Serving Size: Makes 8 1-cup servings
