Pepper Steak

2 cups of cooked rice or noodles3/4 lbs. Flank steak2 tsp chili powder1 tsp ground cumin1/4 tsp salt1 (16 oz) pkg. frozen pepper stir fry vegetables1 (14 oz) can Mexican style tomatoes
1. slice steak in half lengthwise, slice each half diagonally across grain in to 1/4 inch thick slices. Combine chili powder, cumin and salt in ziploc bagg. Add meat. Shake with spices until meat is well coated. Take meat out of bag and stir fry in skillet coated with cooking spray until browned. Take meat out and wipe down skillet, set meat aside and go to step 2.
2. coat large non-stick skillet with cooking spray. place over med. heat until hot. Add pepper stir fry. Stir fry 2 minutes or until just tender. Add tomatoes. Bring to a boil. Cook 2 minutes, stirring occasionally.
3. Add meat to this mixture to reheat.
4. serve over 1/2 cup serving of rice
makes 4 servings.
