Refried Beans

Ingredients
1 lb. bag dried pinto beans2 qts. water5 c. water1 large onion, chopped4 cloves garlic, chopped3 Tbs. saltChipotle peppers
Directions
Soak beans overnight in 2 quarts of water OR cover with water and boil for 4 minutes, then allow to stand for 4 hours.
Drain beans and recover with water (about 5-6 cups). Add onion, garlic and salt. Bring to a boil, cooking continually for about 1 1/2 hours. Water will boil down, add all contents to a food processor and blend down to desired consistency. Add chipotle peppers if desired.
