Em's Easy Quinoa Salad

Ingredients
Salad1/4 cup Whole Grain Quinoa 4 Cherry Tomatoes sliced1 Tbsp red onion chopped25g Capsicum chopped1/4 cup snow peas choppedDressing 1/2 Lemon squeezed Dash of Salt Dash Pepper 0.75 tbsp Extra Virgin Olive Oil
Directions
Cook quinoa as per instructions (0.25 cup quinoa + 0.5 cup water, boil 5 - 10mins then let sit with lid on for five minutes then slide fork through.) Chop veges and add to quinoa. Make dressing and drizzle over salad.
