Scallop KaBobs

Ingredients
1 1/2 lbs of scallops or about 162 medium zucchini, sliced lengthwise in thin slivers, about the size of a piece of bacon.Marinade:2 TB orange juice1 TB Olive Oil1 tsp Caribbean Jerk seasoning1 tsp grated orange zest1/8 tsp red pepper flakes
Directions
In a small bowl, combine the marinade and scallops and put in a ziploc bag, refrigerate for 30 minutes.

Cut zucchini is strips the size of bacon slices.

wrap a zucchini strip around each scallop. Secure 4 scallop/zucchini to a skewer. You can add onions or bell peppers or mushrooms to your Kabobs too!

Coat grill rack with cooking spray. Grill over medim heat for 3-4 minutes on each side.
