Scrambled Tofu and "Hash Browns"

Ingredients
1 tbsp nutritional yeast3/4 tbsp potato starch1/4 tsp black salt1/2 tsp garlic powder1/2 tsp onion powderpinch pepper flakespinch baking powder125 g Mori-Nu Lite Firm Silken Tofu 150 g jicama, diced
Directions
Combine nutritional yeast, potato starch, black salt, garlic powder, onion powder, pepper flakes and baking powder in a small bowl.
Whisk in 2 tbsp hot water and set aside.
Put the tofu in a non-stick pan and lightly mash it.
Add the seasoning mixture and turn the stove onto medium heat.
Sauté for about 5 minutes, until firmed enough to your liking.
Meanwhile, spread the jicama in a glass pie plate sprayed with cooking spray and season with salt and pepper.
Microwave on HI for about 6-9 minutes, until done to your liking.
Serve alongside the scrambled tofu.
