Ingredients
0.25 medium (2-1/2" dia) Onions, raw0.5 package (9 oz), yields Potatoes, frozen, french fried, par fried, cottage-cut, prepared, heated in oven, without salt1.0 cup Spinach, cooked4.0 oz Beef - corned beef6.0 serving Microwave Poached Eggs
Directions
Fry potatoes in 1 tablespoon olive oil (With optional jalapeņo). Add a little water if not enough oil. After potatoes begin to brown, add corned beef and spinach Turn to simmer for about ten minutes. Poach eggs and put on top. Serving Size: 6 1-cup servings
