Ingredients
1 slice, medium (1/4" thick) Red Ripe Tomatoes 1 large Scrambled Egg 1 cup, chopped Onions, raw 1 tbsp Extra Virgin Olive Oil 1 serving avacado - 6 thin slices 1 oz Mexican Cheese, queso anejo
Directions
Sauté chopped tomatoes and a quarter of an onion in the oil; when soft and mushy, add egg and scramble; top with Avacado and cheese; add salt and pepper
