Tilapia Tomato Basil Fillets

Ingredients
2 fl oz Lemon Juice 2 1tsp Olive Oil 4 serving Fish, frozen: Kirkland Signature, Tilapia Loins, 4 oz (113g)/serving (by SONNYG1) 2 tsp Lemon Peel 3 tbsp Basil 4 plum tomato Red Ripe Tomatoes 3 tbsp Parmesan Cheese, grated
Directions
Heat oven to 400F. Peel and dice tomatoes.Spray 2 qt glass baking dish with cooking spray. In shallow dish, combine lemon juice, peel and oil. Dip fillets into lemon mixture turning to coat. Place in baking dish.

Sprinkle basil, salt and pepper over fillets. Spoon tomatoes over fillets. Sprinkle with cheese. Cover with foil. Bake 15 to 20 minutes or until fish flakes easily with fork.
