Ingredients
4 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil .33 cup, packed Brown Sugar 6 tsp Granulated Sugar 1 large Egg, fresh, whole, raw .25 cup Yogurt Plain Greek Yogurt, non-fat 1 tsp Vanilla extract, imitation, alcohol 1 cup Flour, white 1 cup Whole Wheat Flour .5 tsp Baking Soda 1 tsp Baking Powder .5 tsp Salt .25 tsp Cinnamon, ground 1 cup Milk, nonfat (skim milk) 2 cup, diced Rhubarb .25 cup, unpacked Brown Sugar 1.5 tsp Cinnamon, ground .25 cup, chopped Pecans
Directions
Cream oil, sugars and yogurt. Add egg and vanilla. Sour the milk with a tsp of white vinegar. Combine flours, salt, soda, baking powder and 1/4 tsp cinnamon. Add them alternating with the milk to the sugar mixture. Stir in rhubarb. Pour in greased 9x13. Mix the last three ingredients and sprinkle over the top. Bake 35 minutes at 350.
