Crock Pot Chicken Caesar Sandwiches

Ingredients
24 ounces Chicken Breast (cooked), no skin, roasted 1 fl oz Water, tap .125 tsp Pepper, black 10.6 oz yogurt Greek Gods Poseidon Greek Yogurt nonfat plain 0.5 cup Kraft Shredded Parmesan Cheese Natural Cheese 1 fl oz Lemon Juice 4.5 tsp Dijon Mustard (Great Value) 1 tbsp Braggs Apple Cider Vinegar 1 tbsp Soy Sauce - TJ's Reduced Sodium Soy Sauce - 1 Tablespoon - Product of Japan (by REALGOGETTER) 1 tsp Garlic powder 1.5 tsp Salt 5.28 tbsp Parsley, dried 28 gram(s) Cheese, Frigo Shredded Parmesan Cheese (1/4 cup)
Directions
1. Place chicken in slow cooker & add water
2. Sprinkle 1 teaspoon sale, 1/2 teaspoon garlic powder, & 1/2 teaspoon black pepper on chicken.
3. Cook for 4-5 hours on high, or 5-6 hours on low, until chicken is thoroughly cooked but still moist and fall-apart tender.
4. Just before serving, shred chicken (using two forks)
5. Meanwhile, stir together Greek yogurt, 1/2 cups Parmesan chees, lemon juice, Dijon mustard, vinegar, soy sauce, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/16 teaspoon pepper. Mix until all ingredients are thoroughly combined. (You can make the dressing ahead of time and cover & refrigerate it until needed).
6. About 30 min. before serving, stir Caesar dressing into chicken in crock pot
7. Immediately before serving, stir in fresh parsley & remaining 1/4 cup Parmesan cheese.
8. Serve on whole wheat buns or in whole wheat pita pockets with Romaine lettuce, and garnish with additional Parmesan cheese, if desired.
