Ingredients
1 Lg. Zucchini, Sliced2 med. Summer Squash, Sliced1 Green Bell Pepper, Chopped1 Red Bell Pepper, Chopped1 med. Onion, Chopped3 Tbsp. Extra Virgin Olive Oil1 cup Chicken Broth1 tsp. Cumin1 tsp. Thyme
Directions
Preheat Oven to 400.
Slice or Chop items & put in a prepared pan(Sprayed with Cooking Spray).Pour Olive Oil over the veggies & add Seasonings & Chicken Broth.

Bake for 40 to 50 minutes.
