Ingredients
3 Low Carb Tortillas3/4 c. Part Skim Milk Mozzarella Cheese, Shredded15 Jumbo Black Olives, Sliced1 7 oz. can sliced mushrooms, drained3 c. fresh baby spinace3 t. garlic, minced1/4 c. tomato puree1 T. Extra Virgin Olive Oil
Directions
Saute' Spinach, mushrooms, olives and garlic in non stick pan until spinach is wilted.

Place tortillas on non stick baking sheet. Brush with olive oil and divide tomato puree evenly between the three, using the back of a spoon to spread as close to the edges as possible.

Divide the Spinach mixture evenly between the three tortillas, top with shredded cheese and bake in 400 degree oven for 10 minutes or until cheese is bubbly and golden brown. Serves 3.
