Oatmeal Brownie Cookies

Ingredients
2/3 cup whole wheat flour1/3 cup sugar1 cup rolled oats1/2 cup unsweetened cocoa powder (or carob)1 teaspoon baking powder1/4 teaspoon saltEgg replacer equivalent to 1 egg1/3 cup unsweetened applesauce1 teaspoon vanilla
Directions
Preheat oven to 350 degrees.
Combine all dry ingredients. Mix the egg replacer, vanilla and applesauce together, then add to the dry ingredients. Stir until mixed. Form approximately 24 cookies and bake on lightly sprayed cooky sheet for 10 mins.

Cool for 10 mins on rack.

Makes 24 cookies.

    I agree that they are a little dry, but I think they are more like a brownie than a cookie. I went with a real egg from the back yard, so it wasn't vegan, sustitutes creeps me out. Hit the spot when I needed a chocolate kick but wanted to keep it simple and natural. - 3/25/13
