Ingredients
1.0 dash Salt1.0 1tsp Olive Oil5.0 cloves Garlic2.0 cup, pieces or slices Mushrooms, fresh1.0 cup, chopped Onions, raw2.0 cup, sliced Zucchini1.0 cup, chopped or sliced Red Ripe Tomatoes0.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry1.0 cup Vegetable Broth1.5 cup Cannellini Beans White Kidney Beans Bushs
Directions
In a saucepan put vegetable broth and quinoa with 2 cloves if garlic. Cook according to quinoa instructions. In a large saucepan heat oil, onions and gsrlic till they are tender over medium heat. Then add remainder veggies, hold the beans for now. Cook veggies till tender, add beans and cooked quinoa and season to taste. Eat! Serving Size: 2 bowls

    I made this. And quite happy with the results. Really quick and easy to make. Its very filling and one serving is more than enough. I served mine with a hearty salad full if sunflower seeds, carrots and peppers topped with a basalmic vinegarette. - 7/13/16
