600 grams Zucchini 1 tbsp Extra Virgin Olive Oil .25 cup (8 fl oz) Water, tap
take your zucchini and slice it into long strips like noodles, I used a mandolin like I use for hash-browns, 2 Zucchini's was about right. Then place in a pan with olive oil, over med heat, for about 1 min, stirring to mix in the oil. Then add water and cover cooking 6-7 min till tender.
Salt and pepper to taste.
