Spinach-and-Orange Salad with Almonds and Sweet-Sesame Dressing

Salad 1/2 cup slivered almonds 5 oz. baby spinach (6 cups) 2 large oranges, peeled and sectioned 1 Tbs. sesame seeds Sweet-Sesame Dressing 1/4 cup agar sugar2 Tbs. rice vinegar 2 Tbs. low-sodium soy sauce 1/2 tsp. red pepper flakes 3 Tbs. olive oil 1 Tbs. dark sesame oil
Makes 4 large servings
DIRECTIONS
1. To make Salad: Toast almonds in dry skillet over medium heat 2 to 3 minutes, or until light brown. Cool.
2. Arrange spinach in a dish and top with orange sections and almonds.
3. To make Sweet-Sesame Dressing: Blend agar sugar, rice vinegar, low sodium soy sauce, and red pepper flakes in food processor. Pour in olive oil and sesame oil, and blend until smooth. Drizzle 1/4 cup Sweet-Sesame Dressing over salad, and sprinkle with sesame seeds.
You can also put some parley around the salad bowl to make it look pretty - we do this.

Absolutely fantastic!!! I just inhaled it now...
I didn't have all of the ingredients so I made some substitutes. Rice wine vinegar, purevia sweetner (1/2 amt since it's sweeter than sugar), chili powder, and regular soysauce but 1/4 less. Turned out wonderful. I can't wait to make it again! - 9/28/10
