Low Carb Cheesy Cauliflower

Ingredients
1 head, large (6-7" dia) Cauliflower, raw 1 tsp Salt 1 cup, fluid (yields 2 cups whip Heavy Whipping Cream 2 oz Cheese--Philadelphia Cream Cheese 1/3 less fat 1.5 tsp Jack Daniel's Honey Dijon Mustard (by STLKINGHORNS) 128 gram Cheese, Natural Shredded Cheddar/Jack, Kirkland, 28g (1/3 cup) .25 tsp Pepper, black .25 tsp Garlic powder .25 tsp Salt
Directions
Preheat oven to 375°. Spray a casserole dish with pan spray. Cut up cauliflower into small pieces. Place cauliflower in salted boiling water and cook til tender. Drain and place in casserole dish. In a small sauce pan heat cream to boiling. Chop cream cheese into small pieces and add to cream. Add the Dijon and whisk til smooth. Add one cup of the shredded cheese reserving 1/2 cup for the top of the casserole. Add salt, garlic, and pepper. Whisk until cheese is melted and blended. Pour cheese sauce onto cauliflower and toss to coat. Sprinkle the rest of the cheese on top. Bake until cheese is melted and bubbley.
