Tomato vinagrette

Ingredients
3.0 tbsp Extra Virgin Olive Oil1.0 tbsp (C) Vinegar, Red Wine (Gr Value)1.0 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average1.0 pepper Serrano Peppers1.0 dash Salt1.0 dash Pepper, black
Directions
Remove tomato core and cut in half. Remove the seeds and jelly from the tomato. Place all ingredients except for the chile pepper into a food processor or blender and blend well. Remove the stem and seeds from the chile's and adf yo the mixture. Process until the chile's are in very small pieces. Can be stored covered in the refrigerator for 2 weeks.

Serving Size: Makes approximately 1 cup. Serving 2.5 tbsp
