New Fashioned Potato Salad

Ingredients
1 cup mayonnaise1 Tbsp. Cider vinegar1 ½ tsp. salt2 tsp. prepared mustard½ tsp. celery seeddash pepper6 hard boiled eggs, chopped (throw away 2 of the yolks)4 cups cooked, diced potatoes (about 5)1 ½ cup sliced celery½ cup sliced green onions2 Tbsp. chopped parsley
Directions
Scrub potatoes, leaving skins on, and place in large pot. Add 1 tsp. salt and bring to boil. When boiling, cover pot, reduce heat to medium and cook for 30 minutes. When done, remove from pan and cool.

Mix all other ingredients except eggs and potatoes in a large bowl. Throw away 2 of the yolks of the hard boiled eggs, so you are left with 6 whites and 2 yolks. Chop and add to mayo mixture. When potatoes are cool, dice in large chunks and mix with mayo mixture. Refrigerate until cool. Makes 8 side servings.
