Oven fluffy pancakes

0.5 cup Flour - Gold medal all purpose flour 2 tbsp Butter, salted 6 tsp unpacked Brown Sugar 1 serving Apple, Gala (medium) .5 cup Soy Milk
-preheat oven to 400 degrees
-Melt 2 tbsp of butter in pie plate. Sprinkle with 2 tbsp brown sugar. Set aside.
-Peel apple and slice into thin slices. Arrange apples on pie plate on top of brown sugar butter mixture.
-In a separate bowl, beat 2 eggs. add 1/2 cup of soy milk and 1/2 cup of flower. Don't over mix. Pour this mixture over the apples, brown sugar and butter.
-bake for 25 - 30 minutes. Sprinkle with icing sugar if desired.
Serving Size: Makes 1 large pancake, large enough to share with 2 or more people
