Feta Veggie Frittata

Ingredients
0.5 cup, crumbled Feta Cheese2.0 cup Spinach, fresh2.0 tbsp Extra Virgin Olive Oil3.0 serving Yellow Bell Pepper, 1 serving equals 1.8 oz if about 10 strips74.0 gram(s) bell pepper, red, sweet, raw8.0 large Egg, fresh, whole, raw0.5 cup, chopped Onions, raw0.5 cup, pieces or slices Mushrooms, fresh
Directions
Pre-heat oven to 400. Crack eggs in a bowl and scramble with a wire wisk then put aside. Add olive oil to cast iron pan and heat on low and chop peppers, onion and mushrooms. Once veggies are chopped turn up heat and saute veggies in olive oil until cooked. Pour egg over mixed veggies and cook for two minutes. Put spinach on top of egg mixture then add feta cheese on top. Bake for 40 minutes. Serving Size: 1/4 piece
