Cauliflower Fried Rice

Ingredients
1.0 tbsp Olive Oil2.0 tsp Ginger Root1.0 clove Garlic2.0 cup Cauliflower, raw1.0 tbsp Garlic powder2.0 serving Bragg - Premium Nutritional Yeast Seasoning (1Tbsp/5g)0.5 tbsp Kikkoman Low Sodium Soy Sauce0.5 block Tofu, firm0.5 medium (2-1/2" dia) Onions, raw0.5 cup Peas, frozen1.0 large Egg, fresh, whole, raw1.0 medium (4-1/8" long) Scallions, raw
Directions
Using a food processor on low speed, ground cauliflower until pieces are the size of grains of rice. Drain tofu and cut into small pieces. Fry tofu in olive oil and add all ingredients except egg. Scramble egg and add, cooking thoroughly before serving.
