Ingredients
2 Zuchinni1 Eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh2 Medium (2-1/2" dia) Onions, raw1 Green peppers (bell)1.0 can Tomatoes, red, ripe, canned, whole, no salt added (chopped)2 Bay Leaves2 top Salt1/8 Pepper
Directions
Brown onions/pepper & 1 clove of garlic in 3 T of Olive Oil. (Not in calorie count because I don't use oil) Add rest of ingredient and cover. Simmer 15 minutes. Remove cover and simmer 10 minutes. Is delicious hot or cold.
