2.85 lb Beef chuck, arm pot roast 1 large Onions, raw 4 stalk, large (11"-12" long) Celery, raw 1 cup (8 fl oz) Water, tap 2 tbsp Onion powder 1 tsp Salt .5 tsp Pepper, black 1 tbsp Walnut Oil
Pat dry the chuck roast. Season liberally with salt and pepper. Warm walnut oil in a pot on medium high heat. Sear the pot roast on all sides. Mix 2 tbsps. of onion powder with 1 cup of water while the pot roast sears. Once the meat is seared, place it in the slow cooker. Quarter the onion and rough chop the celery. Cook the celery and onion in the same pot that you seared the meat for about 7 minutes or until the onions soften. Add the onions and celery to the top of the meat in the slow cooker and pour the water and onion powder in to the slow cooker. Cook on low for 8-10 hrs.
