Jenn's Roasted Veggies

Ingredients
10 medium whole (2-3/5" dia) Red Ripe Tomatoes 20 small Mushrooms, fresh 1 cup, sliced Zucchini 1 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers) 2 tbsp Extra Virgin Olive Oil 3 clove Garlic
Directions
Cut up veggies and garlic. Put them in a roasting pan.
Sprinkle with olive oil, salt, and pepper.
Roast at 200c for one hour, stirring occassionally.
