Michael A's Lemon Butter Sauce for FIsh

Ingredients
1/4 cup White Wine 3 tbsp Lemon Juice 0.25 tsp Onion: Granulated6 tbsp Butter, unsalted, very cold1 dash Pepper, black 1 tsp chopped Fresh Chives
Directions
Place wine, lemon juice, and onion into a sauce pot.

Simmer and reduce until approximately 2 tablespoons of liquid remain.

With heat under pot as low as you can go, whisk in 4 tablespoons of butter, one tablespoon at a time waiting until each tablespoon is fully incorporated. Off heat, whisk in last 2 tablespoons, one tablespoon at a time. Add pepper and chives.

Serving Size: For 2 6 ounce pieces of salmon
