Comforting Tomato Basil (Cashews/Beef Stock)

Ingredients
4 large whole (3" dia) Red Ripe Tomatoes 1 clove Garlic 2 oz Cashew - Raw (~1oz, 1/4 cup, or 28g) soak 4-5 hours and use liquid as part of the 2 cups of veg stock (Below)4 tbsp Basil leaves.25 tsp Thyme, ground .5 tsp Sea Salt1 tbsp Chia Seed 2 cup Campbell's Vegetable stock,unsalted
Directions
Blanch and peel skins from tomatoes.

Add all ingredients to Souper Blast and extract on heated cycled OR use regular blender with tomatoes

OR
- Blanch and remove skins from tomatoes
- Put tomatoes in blender until smooth liquid, strain to remove any seeds. Put in stock pot.
- Finely chop all other ingredients or use blender to finely chop and add to soup pot.
- Heat for 7 minutes on med-low heat.

Add Cayenne if you like.

For variety, I add a pinch of Cayenne pepper
