Cucumber Salad with Peanut Dressing

1 cup chopped cucumber, peeled and seeded, 1/2 inch dice 3/4 cup chopped celery, 1/2 inch dice 1/4 cup onion, fine dice, soaked in water 1 Tbs grated carrot Dressing:1/4 tsp crushed red chili pepper flakes1 tsp low fat peanut butter 2 Tbs rice vinegar 1/2 tsp Cilantro, dried or fresh1 Tbs lime juice, fresh or concentrate
Chop onion into a fine dice (1/4 inch) and cover in a small bowl with cold water. Set Aside.
Peel cucumber and remove the seeds. Chop cucumber and celery to a 1/2 inch dice; grate carrot.
Whisk together the dressing ingredients.
Drain the onion. Add everything to a medium sized mixing bowl and combine.
Serving Size: makes four 1/2 cup servings
