Sausage, egg and cheese biscuit cups

4.0 oz Ground Pork Sausage, Lean cooked, drained2.0 large Egg, fresh, whole, raw0.12 cup Milk, 2%, with added nonfat milk solids, without added vit A0.5 cup, shredded Cheddar or Colby Cheese, Low Fat5.0 serving biscuits, buttermilk canned - 2 biscuits
1. Preheat oven to temp indicated on biscuit package. Grease muffin tin or spray with nonstick spray.
2. Brown sausage, breaking up meat as it cooks. Drain.
3. While meat cooks, roll out each biscuit and press into and up sides of muffin cup.
4. Beat eggs with milk, salt and pepper.
5. Evenly distribute sausage, cheese and egg amongst biscuit cups.
5. Bake until edges are golden and eggs are set.
Enjoy warm from the oven, or cool completely, refrigerate and reheat for breakfast on the go throughout the week.
