17 Bean & 3 Pepper Salad

1/2 cup (dry) 17 Bean & Barley Mix, Trader Joe's1 cup Tri-Colored Frozen Peppers2 clove Garlic (I roasted mine)2 tbsp Balsamic Vinegar2 tsp Extra Virgin Olive Oil1/2 cup (4 tbsp) Chives, choppedDash Pepper
*Soak the beans overnight in plenty of water. Thaw the peppers and corn overnight in the fridge.
*Rinse the beans well and mix all the ingredients together. Can be eaten immediately or made ahead of time.
**Variations: Add corn or different herbs. Use onions instead of chives.
** The beans and peppers were bought at Trader Joe's. I am sure you can find the peppers elsewhere and can substitute regular frozen corn, but I am not sure about the 17 beans. I am sure it would be great with what you can find, so be brave and experiment!
